Why We Pasteurise Our Hot Sauce
Fermentation gives our sauce its soul. Pasteurisation is what makes it safe to live in your cupboard. Here’s why that second step is every bit as important as the first.
Fermentation is alive — and it doesn’t know when to quit
Our sauces begin as ferments. Fresh chillies and vegetables, salt, and time: naturally occurring lactic acid bacteria eat the natural sugars and, in return, build the tangy, savoury, complex flavour that makes fermented hot sauce so moreish.
But those bacteria are living organisms, and living things don’t stop just because the flavour has hit the sweet spot. Left to their own devices, they keep working — and one of the by-products of that work is carbon dioxide gas. In an open crock that gas escapes harmlessly. Sealed inside a bottle, it has nowhere to go. Pressure builds until the bottle fizzes over, leaks, or worse - see above. An unstable ferment in a capped bottle is, quite literally, a pressure vessel.
What pasteurisation actually does
Pasteurisation is the controlled use of heat. The sauce is gently brought up to a specific temperature for a set time — hot enough to do its job, not so hot that it cooks away the flavour developed over weeks of fermenting. It achieves two essential things:
- It stops the ferment. The bacteria and yeasts responsible for ongoing gas production are deactivated, so the sauce becomes stable. No building pressure, no leaks, no surprises when you open it.
- It makes the sauce safe and shelf-stable. Heat also knocks out unwanted microbes that could cause spoilage, so the bottle stays consistent and trustworthy from the first drop to the last — on the shelf, in transit, and in your kitchen.
The honest trade-off
We’ll be upfront: pasteurising a fermented sauce does reduce the live cultures that raw ferments are prized for. It’s a deliberate choice, and for a bottled product that’s going to travel and sit on a shelf, it’s the right one. Here’s the good news — the flavour complexity built during fermentation is baked in. That depth survives the heat. What you lose is some live culture; what you keep is the taste, the stability, and the peace of mind.
There’s also a bit of perspective worth adding here. Hot sauce isn’t a health food, and it was never meant to be eaten by the spoonful — you use a few drops at a time. Even if we bottled it raw and unpasteurised, that splash on your eggs or your tacos would deliver a vanishingly small dose of live cultures; nowhere near what you’d get from a proper serve of yoghurt, kimchi or sauerkraut eaten as actual food. So the “probiotic” angle on any hot sauce, ours included, is mostly marketing. You don’t buy hot sauce for your gut flora — you buy it because it tastes incredible. Pasteurising costs us a benefit that was negligible to begin with, and keeps the thing you’re actually here for: the flavour.
The bottom line
Fermentation is the craft. Pasteurisation is the discipline that makes that craft safe to share. It’s the difference between a fun science experiment and a product you can confidently put on your table — and everything you eat. We think you deserve both the flavour and the reliability.
